This extra fruity jam tarts recipe is a perfect easy recipe for kids to cook this summer - they're simple to make and completely delicious!

After making our easy mini quiches recently, Small Child and I were left with half a packet of ready-made pastry to use up, and we decided to make something sweet with it. Strawberry season has just begun here and they are absolutely delicious at the moment, so I definitely wanted to get some fresh strawberries into whatever we made.

Small Child wanted to make jam tarts, so we decided to experiment with both and see what would happen! The end results were so tasty that they barely lasted a day, and everyone who tasted them loved this delicious twist on the traditional jamtart.

This post is part of my easy recipes for kids series, so at the end of the post you'll find a free printable recipe sheet that you can download and print out for your own 'small child' to have a go at cooking. Following a simple recipe from beginning to end can be a great confidence boost and your child might just surprise you with how much they can achieve in the kitchen!

I’ve used ready-made pastry for this recipe to make it quicker and easier and to keep the ingredients list short, you could of course make your own if you prefer.

Extra Fruity Jam Tarts

Ingredients

  • ½ pack (250g) ready made shortcrust pastry
  • strawberry jam
  • 1 dessert apple
  • 1 tbs lemon juice
  • 200g strawberries

Method

Preheat oven to 180°C (Gas mark 4/350°F). Spray or brush a 12 hole muffin tin with a little oil.

Scatter a handful of flour onto a smooth surface and roll out the pastry. Using a large circle cutter (We used the largest of our nestingcrinkle edged circlecutters) cut out 12 circles of pastry.

Push a pastry circle into each hole in the muffin tin to form a cup, then drop a small teaspoon of jam into the bottom of each pastry cup.

Mix the lemon juice into a bowl of cold water. Peel, core and chop the apple and soak in the lemon water, then drain the apple pieces and pat dry.

Wash, hull and chop the strawberries into quarters, then fill up the tarts with the apple and strawberry pieces.

Bake in the oven for 20-25 minutes until the pastry is golden and the fruit is cooked through.

We served ours with a dollop of whipped cream, they were absolutely delicious!
